Crockpot Pot Roast Recipe

So I think I've mentioned once or twice how much I LOVE cooking with my crockpot, and now that I'm getting VERY pregnant and HUGE I love it even more!! This pregnancy is so different then my other 2, with Frankie it was just me and Frank so take out every night was fine, and with Ava it was still okay because Frankie was still eatting his bottle and baby food (hello Irish twins! lol). This time, not so easy, I actually have to cook healthy hearty meals for my children, so what better way then using the crockpot?! Now this is still my favorite Pot Roast Recipe but I really don't like the way it comes out when I add potatoes and carrots to it. So since I wanted this too be a one pot dinner (again, I'm tired and very pregnant, lol) I changed it up a bit and it was a HIT!! Both my Franks thought it was great and so did the lil lady and my Mom! SCORE!!!!
What you'll need:
Any kind of roast you like, this was a top eye round
Salt and Pepper
Bag of Baby Carrots
Whole bunch of small red potatos cut up in 4's
2 envelopes of Lipton Onion Soup Mix
Box of Beef Broth

Instructions:
Throw everything in the crock pot, mix together, and cook on low for 8 hours.
Yep, oretty much that simple!!
If you think the broth will be too salty you can add some water ( I didnt)

Well there you have it, the results, well see for yourself
Nom Nom, soooo yummy!!!

  2. Yum, thanks for sharing - I really need to start using my crock pot more often, because I just don't feel like cooking when its 100+ degrees outside!!
